I love a good steak salad, especially when the greens come from my own garden. That is not possible right now, since we are a foot deep in snow, but you can always count on the local grocer for a really nice selection of ingredients for a lovely, satisfying, steak salad! And luckily, almost all of the ingredients are available organically. Read on to see my version, including my new favorite salad dressing, which in my opinion will always make or break this meal. I am once again proud to share it with you. Remember spring is not far off, and you can easily grow most of the ingredients yourself in just a few months.

Salad Mixings

(Serves 4)

Ingredients:

  • 1 head baby romaine lettuce, washed, chopped and spun dry
  • 1 head green leaf lettuce, washed, chopped and spun dry
  • Handful (4-5) red radishes, thinly sliced
  • 4 green onions chopped, or chopped red onion (optional)
  • 1 large cucumber peeled, cut length wise and sliced
  • 1/4 cup blue or feta crumbles
  • 1/2 cup chopped tomatoes
  • 1/4 cup dried Montmorency cherries
  • 1/4 cup sliced almonds
  • 1/4 cup chopped cilantro
  • One 8 oz. flat iron grass fed steak, grilled till done to your preference (I like mine medium rare), thinly sliced

Directions:

In a large bowl, assemble ingredients together and refrigerate.

Cilantro Lime Dressing

This sauce makes all the difference, bringing out and enhancing the flavor of this salad. 

(Makes approx. 2 cups)

Ingredients:

  • 1/2 cup red wine vinegar
  • 2 tbsp. fresh squeezed lime juice
  • Generous amount of sea salt and pepper
  • 1/2 tsp. of tabasco sauce
  • 1/2 cup chopped cilantro
  • 1 tsp cumin
  • 1 cup good quality extra virgin olive oil (evoo)

Directions:

With the exception of the last ingredient (olive oil), add all the ingredient to a blender and blend.

As the blender is whirring, slowly add the olive oil in a small stream and blend until the dressing has thickened.

Pour over the assembled salad and serve. Extra dressing can be stored in the fridge for a week.

Note: the dressing is made with evoo, which becomes quite thick when refrigerated. Allow to sit at room temperature for 10 minutes to become liquid again.
